Cilantro

Cilantro

Cilantro is a fast-growing annual herb prized for its fresh, citrusy leaves and spicy seeds (called coriander). A kitchen staple in Latin American, Asian, and Middle Eastern cuisines, it’s ideal for containers, raised beds, or herb gardens.

Quick Facts

  • Botanical name: Coriandrum sativum

  • Common names: Cilantro (leaves), Coriander (seeds)

  • Plant type: Cool-season annual herb

  • Days to maturity: 20–30 days (leaves), 90–100 days (seeds)

  • Height: 12–24 inches

  • Sun exposure: Full sun to light shade

  • Hardiness zones: USDA 2–11 (cool-season annual)

  • Spacing: 6–8 inches apart

When to Plant

  • Spring: Direct sow 2–3 weeks before the last frost.

  • Fall: Sow in late summer for a cool-season harvest.

  • Succession planting: Every 2–3 weeks to maintain a continuous supply.

  • Germination time: 7–14 days at 60–70°F (16–21°C)

How to Plant

  1. Soil preparation: Light, well-drained soil with compost. pH 6.2–6.8 preferred.

  2. Seed prep: For faster germination, crush hulls lightly before planting.

  3. Sowing depth: 1/4–1/2 inch deep.

  4. Watering: Keep evenly moist during germination; reduce once established.

Growing Tips

  • Cilantro prefers cooler temperatures and bolts quickly in heat.

  • Provide afternoon shade in warm climates.

  • Once plants bolt, allow seeds to fully mature and dry for coriander.

  • Grows well in containers and raised beds.

Harvesting

  • Leaves: Begin harvesting when 4–6 inches tall. Snip outer leaves first.

  • Seeds: Allow seed heads to turn brown; cut and dry upside down in a paper bag.

  • Regrowth: Multiple harvests possible before bolting if harvested regularly.

Companion Plants

Pairs well with basil, mint, chives, and root vegetables like carrots. Helps repel aphids and spider mites.

Why Grow Cilantro?

Cilantro offers two harvests in one: flavorful leaves and aromatic coriander seeds. It’s fast-growing, easy to sow, and a kitchen essential for fresh salsa, curries, marinades, and more.
